Ingredients

  • 7 grams active dry yeast
  • 500 grams all-purpose flour
  • 60 grams butter
  • 3 eggs
  • 240 ml milk
  • 5 grams salt
  • 100 grams sugar
  • 500 ml vegetable oil

Directions

Step 1
In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
Step 2
In a large mixing bowl, combine the flour, sugar, and salt.
Step 3
Add the yeast mixture, eggs, and melted butter to the dry ingredients and mix until a soft dough forms.
Step 4
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Step 5
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Step 6
Punch down the dough and divide it into small balls, about the size of a golf ball.
Step 7
Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F).
Step 8
Fry the dough balls in batches for about 2-3 minutes on each side, or until golden brown.
Step 9
Remove the malasadas from the oil and drain on paper towels.
Step 10
Roll the warm malasadas in sugar and serve immediately.
