Step 1
Rinse the dried beans and place them in a large pot. Cover with water and let soak overnight, then drain.

In the same pot, add the soaked beans, ham hock, onion, carrots, celery, garlic, and bay leaf.

Pour in the water and bring to a boil. Reduce the heat and let simmer for about 1.5 to 2 hours, or until the beans are tender.

Remove the ham hock from the pot. Cut the meat off the bone and chop it into bite-sized pieces. Return the meat to the soup.

Season with salt and black pepper to taste. Remove the bay leaf before serving.
