  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 200 grams granulated sugar
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 60 ml milk
  • 100 grams packed brown sugar
  • 425 grams pumpkin puree
  • 0.5 teaspoon salt
  • 1.5 teaspoons vanilla extract
  • 120 ml vegetable oil

Directions

Step 1
Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
Step 2
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
Step 3
In another bowl, mix together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, milk, and vanilla extract until well combined.
Step 4
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Step 5
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Step 6
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 7
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
