  • 2 carrots
  • 2 stalks celery
  • 2 cups cheddar cheese
  • 4 cups chicken broth
  • 0.5 cup flour
  • 3 cloves garlic
  • 450 g ground beef
  • 2 cups milk
  • 1 tbsp olive oil
  • 1 onion
  • pepper
  • 3 potatoes
  • salt

Directions

Step 1
In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Remove the beef and set aside.
Step 2
In the same pot, add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
Step 3
Add the minced garlic and cook for an additional 1 minute.
Step 4
Return the ground beef to the pot. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
Step 5
In a small bowl, whisk together the flour and milk until smooth. Gradually stir into the soup. Cook until the soup has thickened, about 5 minutes.
Step 6
Stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
