  • 5 g black pepper
  • 250 g breadcrumbs
  • 2 eggplant
  • 3 eggs
  • 100 g flour
  • 500 ml marinara sauce
  • 200 g mozzarella cheese
  • 60 ml olive oil
  • 100 g parmesan cheese
  • 5 g salt

Directions

Step 1
Preheat the oven to 200°C (400°F).
Step 2
Slice the eggplants into 1 cm thick rounds.
Step 3
In a bowl, mix the breadcrumbs and grated Parmesan cheese.
Step 4
Dredge the eggplant slices in flour, then dip in beaten eggs, and coat with the breadcrumb mixture.
Step 5
Place the coated eggplant slices on a baking sheet lined with parchment paper.
Step 6
Drizzle olive oil over the eggplant slices and bake for 25 minutes, flipping halfway through.

In a baking dish, spread a layer of marinara sauce.

Layer the baked eggplant slices over the sauce, then sprinkle with mozzarella cheese.

Repeat the layers until all ingredients are used, finishing with a layer of mozzarella cheese.
