Preheat your oven to 160°C (325°F).

Heat the olive oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned.

Remove the roast from the pot and set it aside. In the same pot, add the chopped onion and minced garlic, sauté until softened.

Deglaze the pot with red wine, scraping up any browned bits from the bottom.
