  • 500 ml beef broth
  • 1.5 kg beef chuck roast
  • 4 carrots
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp pepper
  • 6 potatoes
  • 250 ml red wine
  • 1 tsp rosemary
  • 1 tsp salt
  • 1 tsp thyme

Directions

Step 1
Preheat your oven to 160°C (325°F).
Step 2
Heat the olive oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned.
Step 3
Remove the roast from the pot and set it aside. In the same pot, add the chopped onion and minced garlic, sauté until softened.
Step 4
Deglaze the pot with red wine, scraping up any browned bits from the bottom.
Step 5
Return the roast to the pot and add the beef broth, carrots, potatoes, salt, pepper, thyme, and rosemary.
Step 6
Cover the pot and place it in the preheated oven. Cook for about 3 hours, or until the beef is tender.
Step 7
Remove the pot from the oven and let the roast rest for a few minutes before serving.
Step 8
Serve the pot roast with the vegetables and some of the cooking liquid as gravy.
