Simple Chicken Stir-Fry

A quick and easy chicken stir-fry recipe that's perfect for a weeknight dinner. This dish is loaded with fresh vegetables and juicy chicken, all tossed in a delicious savory sauce.

Ingredients

  • 1 bell pepper
  • 450 g boneless chicken breasts
  • 200 g broccoli
  • 1 carrot
  • 1 tbsp cornstarch
  • 3 cloves garlic
  • 1 tbsp ginger
  • 60 ml soy sauce
  • 2 tbsp vegetable oil
  • 60 ml water

Directions

Step 1
In a bowl, mix the soy sauce, garlic, and ginger. Add the sliced chicken and marinate for 15 minutes.
Step 2
Heat 1 tbsp of vegetable oil in a large pan over medium-high heat. Cook the chicken until browned and cooked through, then remove from pan.
Step 3
In the same pan, add another 1 tbsp of vegetable oil. Add broccoli, bell pepper, and carrot. Stir-fry for about 5 minutes until vegetables are tender-crisp.
Step 4
In a small bowl, mix the cornstarch and water to create a slurry.
Step 5
Return the chicken to the pan with the vegetables. Add the cornstarch slurry and stir well until the sauce thickens.
Step 6
Serve hot over rice or noodles.
