Directions
Step 1
Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.

Add diced chicken breast and cook until no longer pink, about 5-7 minutes. Remove from pan and set aside.

In the same pan, add the remaining tablespoon of vegetable oil.

Add diced carrots, frozen peas, and minced garlic. Cook until vegetables are tender, about 5 minutes.

Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.

Add the cooked rice, cooked chicken, soy sauce, salt, and black pepper to the pan. Stir to combine all ingredients.
