Ingredients

  • 1 carrot
  • 500 g cooked rice
  • 2 eggs
  • 100 g frozen peas
  • 2 cloves garlic
  • 3 green onions
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil

Directions

Step 1
Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
Step 2
Add the garlic and cook for 1 minute, until fragrant.
Step 3
Add the chopped carrot and cook for 3-4 minutes, until softened.
Step 4
Stir in the frozen peas and cook for another 2 minutes.
Step 5
Push the vegetables to one side of the skillet and add the remaining tablespoon of vegetable oil to the other side.
Step 6
Crack the eggs into the empty side of the skillet and scramble them until fully cooked.
Step 7
Mix the scrambled eggs with the vegetables.
Step 8
Add the cooked rice to the skillet and stir well to combine.
Step 9
Pour in the soy sauce and stir until the rice is evenly coated.
Step 10
Sprinkle the chopped green onions over the top and serve hot.
