  • 450 g black beans
  • 2 g black pepper
  • 450 g black-eyed peas
  • 60 g cilantro
  • 300 g corn
  • 3 cloves garlic
  • 1 green bell pepper
  • 1 jalapeño
  • 60 ml lime juice
  • 120 ml olive oil
  • 1 red bell pepper
  • 1 red onion
  • 60 ml red wine vinegar
  • 5 g salt
  • 3 tomatoes

Directions

Step 1
In a large bowl, combine the black beans, corn, black-eyed peas, red bell pepper, green bell pepper, red onion, jalapeño, cilantro, and tomatoes.
Step 2
In a separate bowl, whisk together the olive oil, red wine vinegar, lime juice, garlic, salt, and black pepper.
Step 3
Pour the dressing over the vegetable mixture and toss to coat evenly.
Step 4
Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Step 5
Serve chilled with tortilla chips or as a topping for grilled chicken or fish.
