Rinse the sushi rice under cold water until the water runs clear.

Combine the rinsed rice and 600ml of water in a rice cooker. Cook according to the rice cooker instructions.

While the rice is cooking, combine the rice vinegar, sugar, and salt in a small saucepan over medium heat. Stir until the sugar and salt are completely dissolved. Remove from heat and let it cool.

Once the rice is cooked, transfer it to a large bowl. Pour the vinegar mixture over the rice and gently fold to combine. Be careful not to mash the rice.

Allow the seasoned rice to cool to room temperature before using it for sushi.
