Peel the green plantains and cut them into 1-inch slices.

Heat the olive oil in a frying pan over medium heat.

Fry the plantain slices until golden brown and tender, about 4-5 minutes per side.

Remove the plantains from the pan and place them on paper towels to drain excess oil.

In a mortar and pestle, mash the garlic cloves with the salt until a paste forms.

Add the fried plantains to the mortar, a few at a time, and mash them together with the garlic paste.

Mix in the pork cracklings until well combined.

Gradually add the chicken broth while mashing until the mixture reaches a desirable consistency.
