In a medium saucepan, combine water, unsalted butter, and a pinch of salt. Bring to a boil over medium heat.

Remove from heat and add flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.

Let the dough cool for 5 minutes before adding the eggs, one at a time, stirring well after each addition until fully incorporated.

Heat vegetable oil in a deep frying pan or pot over medium-high heat until it reaches 375°F (190°C).

Transfer the dough to a piping bag fitted with a star tip nozzle. Pipe 4-inch strips of dough into the hot oil, cutting off with scissors.

Fry the churros until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

In a shallow dish, combine granulated sugar and ground cinnamon. Roll the warm churros in the mixture until well coated.
