Directions
Step 1
In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.

In a saucepan, combine the heavy cream and granulated sugar. Cook over medium heat, stirring constantly, until the sugar has dissolved and the cream is hot but not boiling.
Step 3
Remove the saucepan from the heat and stir in the vanilla extract and the bloomed gelatin until completely dissolved.
Step 4
Pour the mixture into ramekins or serving glasses. Let them cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours or until set.
Step 5
Serve chilled, optionally garnished with fresh berries or fruit sauce.
