Ingredients

  • 0.5 kg andouille sausage
  • 2 bay leaves
  • 1 bell pepper
  • 1 tsp black pepper
  • 1 tbsp cajun seasoning
  • 2 celery stalks
  • 0.5 kg chicken breast
  • 480 ml chicken broth
  • 400 g diced tomatoes
  • 2 tbsp fresh parsley
  • 4 garlic cloves
  • 2 green onions
  • 2 tbsp olive oil
  • 1 onion
  • 300 g rice
  • 1 tsp salt
  • 0.5 kg shrimp

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add diced chicken breast and cook until browned.
Step 3
Add sliced andouille sausage and cook for another 5 minutes.
Step 4
Stir in the onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
Step 5
Add diced tomatoes, chicken broth, rice, Cajun seasoning, bay leaves, salt, and black pepper.
Step 6
Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is cooked.
Step 7
Stir in the shrimp and cook for an additional 5 minutes, or until shrimp are pink and opaque.
Step 8
Remove bay leaves and garnish with sliced green onions and fresh parsley before serving.
