Step 1
Preheat your oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds.

Brush the inside of each squash half with olive oil, then sprinkle with salt, black pepper, and garlic powder.

Place the squash halves cut side down on a baking sheet and roast in the preheated oven for 40-45 minutes, or until the flesh is tender and easily pierced with a fork.
Step 5
Remove the squash from the oven and let it cool for a few minutes. Use a fork to scrape out the spaghetti-like strands of squash into a bowl.
Step 6
Toss the spaghetti squash with the grated parmesan cheese and chopped parsley. Serve warm.
