Step 1
Preheat the oven to 375°F (190°C).
Step 2
Rinse the chicken inside and out under cold running water and pat dry with paper towels.
Step 3
Rub the chicken with olive oil, ensuring it's evenly coated.
Step 4
Season the inside and outside of the chicken with salt and black pepper.
Step 5
Cut the lemon in half and place it inside the cavity of the chicken along with the garlic cloves and rosemary sprigs.
Step 6
Place the chicken breast-side up in a roasting pan.
Step 7
Roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear when the thickest part of the thigh is pierced.
Step 8
Let the chicken rest for 10-15 minutes before carving.
