Ingredients

  • 2 cans cannellini beans
  • 0.5 teaspoon cayenne pepper
  • 2 cups chicken breast
  • 3 cups chicken broth
  • 1 cup corn
  • 4 ounces cream cheese
  • 1 teaspoon dried oregano
  • 0.5 cup fresh cilantro
  • 2 garlic cloves
  • 1 can green chilies
  • 0.5 teaspoon ground black pepper
  • 2 teaspoons ground cumin
  • 0.5 cup heavy cream
  • 1 tablespoon olive oil
  • 1 onion

Directions

Step 1
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.
Step 3
Stir in the shredded chicken, chicken broth, cannellini beans, green chilies, corn, cumin, oregano, black pepper, and cayenne pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.

Add the cream cheese and heavy cream to the pot. Stir until the cream cheese is melted and the mixture is well combined.
Step 5
Remove from heat and stir in the fresh cilantro. Serve hot.
