  • 1 bay leaf
  • 3 carrots
  • 3 celery stalks
  • 1500 ml chicken broth
  • 4 chicken thighs
  • 200 g egg noodles
  • 2 garlic cloves
  • 1 onion
  • 2 tbsp parsley
  • 0.5 tsp pepper
  • 1 tsp salt
  • 500 ml water

Directions

Step 1
In a large pot, add chicken thighs, chicken broth, and water. Bring to a boil over medium-high heat.
Step 2
Once boiling, reduce heat to low and simmer for 20 minutes, skimming off any foam that rises to the top.
Step 3
Add the sliced carrots, celery, chopped onion, minced garlic, bay leaf, salt, and pepper to the pot. Simmer for another 20 minutes.
Step 4
Remove the chicken thighs from the pot, shred the meat, and discard the bones. Return the shredded chicken to the pot.
Step 5
Add the egg noodles to the pot and cook according to package instructions, usually about 7-10 minutes.
Step 6
Remove the bay leaf, adjust seasoning with salt and pepper if needed, and stir in the chopped parsley.
Step 7
Serve hot and enjoy your homemade chicken soup.
