  • 8 slices bacon
  • 0.5 teaspoons black pepper
  • 2 tablespoons butter
  • 2 stalks celery
  • 4 cups chicken broth
  • 4 cups corn
  • 2 cups milk
  • 1 onion
  • 4 cups potato
  • 1 teaspoon salt
  • 1 teaspoon thyme

Directions

Step 1
In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
Step 2
Add the butter to the pot with the bacon fat. Once melted, add the chopped onion and celery. Cook until the vegetables are tender, about 5 minutes.
Step 3
Stir in the diced potatoes, corn, and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
Step 4
Stir in the milk, salt, black pepper, and thyme. Cook for an additional 5 minutes, stirring frequently.
Step 5
Crumble the cooked bacon and stir it into the chowder. Serve hot.
