Step 1
Place beets in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until tender, about 20-25 minutes. Drain and cool.

Peel and slice the beets.

In a saucepan, combine 2 cups water, vinegar, sugar, salt, and ground cloves. Bring to a boil, stirring until sugar is dissolved.
