Ingredients

  • 1 bay leaf
  • 1200 ml beef broth
  • 900 grams beef chuck
  • 1 teaspoon black pepper
  • 4 carrots
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 onion
  • 4 potatoes
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 2 tablespoons tomato paste

Directions

Step 1
Heat olive oil in a large pot over medium-high heat.
Step 2
Add the beef chuck cubes and brown on all sides.
Step 3
Remove the beef and set aside.
Step 4
In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
Step 5
Add the sliced carrots and cook for another 5 minutes.
Step 6
Return the beef to the pot and add the beef broth, tomato paste, bay leaf, dried thyme, salt, and black pepper.
Step 7
Bring to a boil, then reduce the heat to low and simmer for 1.5 hours.
Step 8
Add the cubed potatoes and continue to simmer until the potatoes are tender, about 30 minutes.
Step 9
Remove the bay leaf before serving.
