Preheat your oven to 160°C (320°F).

Season the beef short ribs with salt and black pepper.

Heat the olive oil in a large oven-safe pot over medium-high heat.

Brown the ribs on all sides, then remove them from the pot and set aside.

In the same pot, add the chopped onion and cook until softened.

Add the minced garlic and cook for another minute.

Stir in the beef broth, red wine, and tomato paste, scrapping up any browned bits from the bottom of the pot.
