Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

In another bowl, beat the eggs, oil, sugar, and vanilla extract together until well blended.

Stir the grated zucchini into the wet ingredients.
Step 5
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Step 6
Pour the batter into the prepared loaf pan and smooth the top.
Step 7
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
